- 3/4 cup mashed ripe bananas (about 2 large bananas)
- 1/2 cup diced fresh strawberries
- 1/4 cup plain Greek yogurt
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
- In a medium bowl, whisk together 1½ cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, and ¼ teaspoon salt.
- In a large bowl, mix ½ cup granulated sugar and ¼ cup melted unsalted butter until well combined. Add 1 large egg and 1 teaspoon vanilla extract, and beat until smooth.
- Stir in ¾ cup mashed ripe bananas and ¼ cup plain Greek yogurt into the wet ingredients.
